Kitchen Chronicles: Chocolate Chip "Cookie"

I have spent 29 years on this earth and there is one thing that I have never done: cook fresh and tasty meals. But now, things are beginning to change (thanks primarily to my girlfriend). Every recipe that I will write about comes from her. Now, she can eat anything... as long as it does not contain corn, soy, gluten, or dairy. I have gotten on board with this diet and have not felt better. I have dropped a few pounds, I have been sleeping like a baby, and I walk around with a little more pep in my step (and not in a carbohydrate induced haze). Recipe #3: Chocolate Chip "Cookie". I am not really sure what to call this thing but it is pretty damn good and my favorite treat to make!
Chocolate Chip "Cookie"

Ingredients (serves two people)
1 Banana
0.5 cup of Peanut Butter
1.5 Cups of Gluten Free Rolled Oats
4 Tablespoons of Oat Flour
1 Tablespoon of local honey
0.5 Tablespoon of Vanilla
One-third cup of Enjoy Life Chocolate Chip Cookies

Instructions
  1. Preheat oven to 350 degrees
  2. Lightly coat the cookie sheet with olive oil. I spray it on
  3. Mash banana. Keep it in the peel and mash it around. When it is soft, put it in a mixing bowl
  4. Add peanut butter to mixing bowl and mix it around
  5. Add the honey, mix it together
  6. Add the vanilla, mix it together
  7. Add the oats, mix it together
  8. Add the oat flour. This is going to help bind the batter and it should be pretty thick at this point. 
  9. Add the chocolate chips and mix.
  10. Get yourself a small scooper and begin to scoop the batter and place on the cookie sheet. The cookie ends up being a little ball so if you want to use your hands, have at it!
  11. Place in the oven for about 12 minutes. The exterior of the cookie will be crisp and it should begin to brown just a little bit
  12. Allow the cookie to sit for a period of time before trying


Now, if you want a sweeter cookie, use 1.5 tablespoons of honey. If you are a big peanut butter fan, throw a little extra in. As you can see, these ingredients made thirty "cookies". I gotta warn you, they are kind of addicting. They do not last very long...especially if I am around!
