Kitchen Chronicles: Chocolate Chip Pancakes

     I have spent 29 years on this earth and there is one thing that I have never done: cook fresh and tasty meals. But now, things are beginning to change (thanks primarily to my girlfriend). Every recipe that I will write about comes from her. Now, she can eat anything... as long as it does not contain corn, soy, gluten, or dairy. I have gotten on board with this diet and have not felt better. I have dropped a few pounds, I have been sleeping like a baby, and I walk around with a little more pep in my step (and not in a carbohydrate induced haze). The first recipe: Chocolate Chip Pancakes. This was my first attempt making this dish. It took about 20-25 minutes and the results were good!

Chocolate Chip Pancakes

Catefory: Breakfast/snack

Ingredients
One and two-thirds cup of Gluten Free Oat Flour
One teaspoon baking powder
One-half teaspoon baking soda 
One-half teaspoon sea salt
Six teaspoons of coconut palm sugar
One cup almond milk
Two eggs
One tablespoon of pure vanilla extract
One banana
One-half cup of Enjoy Life chocolate chips
Coconut oil

Instructions
  1. Put all the dry contents in a bowl and mix together
  2. Blend the milk, eggs, vanilla, and banana
  3. Add the dry contents to the blended mix
  4. Blend them together
  5. If there is mix stuck on the side of blender, scrape it off with spoon and mix it by hand
  6. Add chocolate chips to blender and use the "pulse" setting on blender for a few seconds
  7. Lightly grease skillet with coconut oil (grease skillet prior to each time you pour batter)
  8. Cook over medium heat
  9. This batter should make 8-12 pancakes depending on the size
After making these I threw the leftovers in the fridge and had a nice little snack the following day. If I can make these taste good, anyone can! Let me know how it goes for all of you. More recipes to come soon!

If your looking for a less dessert'y' version of this pancake sub out the chocolate chips for some fresh diced up berries!
(if using frozen berries, thaw them first and add a little extra oat flour or a little less almond milk)
someone ...has a sweet tooth...
I love chocolate, but prefer the berry version of these pancakes :)
