Kitchen Chronicles: Salmon, Veggies and Sauteed Spinach!

I have spent 29 years on this earth and there is one thing that I have never done: cook fresh and tasty meals. But now, things are beginning to change (thanks primarily to my girlfriend). Every recipe that I will write about comes from her. Now, she can eat anything... as long as it does not contain corn, soy, gluten, or dairy. I have gotten on board with this diet and have not felt better. I have dropped a few pounds, I have been sleeping like a baby, and I walk around with a little more pep in my step
Salmon, Veggies and Sauteed Spinach
Difficulty: 3 out of 5
Category: Lunch/Dinner

Ingredients
One bag of Wegman's Organic Broccoli and Cauliflower
A couple of handfuls of Organic Baby Spinach
1 cup of Wegman's Organic Raw Almonds
2 Cloves of Garlic
2 Wild Caught Salmon Fillets
Olive Oil
Goya Adobo All Purpose Seasoning

Instructions
Veggies
Pre-heat the oven to 400 degrees
Spray olive oil on cookie sheet, spread veggies out. Spray top side of veggies now
Cover the veggies with the Adobo All Purpose Seasoning
Put in the oven for 16-22 minutes

Sauteed Spinach
Grind, dice or chop up the Almonds 
Dice the garlic cloves
Put a few tablespoons of Olive Oil in a stove top pan and heat up.
Throw a couple handfulls of spinach, garlic, and almonds in the olive oil and heat it all up

Salmon
The oven is already pre-heated, but if not, turn on to 400 degrees
Place aluminum foil on cookie sheet, put a little olive oil on cookie sheet
Place Salmon on Cookie Sheet
Spray the Salmon with olive oil
Sprinkle the Adobo All Purpose Seasoning on the fillets
Place in oven and cook for 10-14 minutes. Check at the 8-10 minute mark to make sure all is well!
